Ya Shi Xiang Dan Cong China Wulong Tea

Ya Shi Xiang (Duck Shit Fragrance) is a wulong tea from Ping Keng Tou Village in the Guangdong Province on the southeastern coast of China. Dan Cong or “single tree” teas are hand-harvested not from bushes, but by climbing trees. These distinctive teas are selectively bred from cultivars for their own unique taste and aroma characteristics and the leaves are harvested by tree or type of tree. These leaves are never blended and are processed separately from the leaves of other types of trees in order to retain their unique taste and aromatic character. The unique Ya Shi Xiang cultivar is rarely found outside of China and this particular Ya Shi is grown at an elevation of 3,600 feet. The hand-processing of this tea is slightly different than other Ya Shi wulongs in that the leaves undergo a dehydration step to stop oxidation at a very early stage and there is no roasting step.

The large, twisted leaves unfurl to yield a light-bodied, viscous and smooth infusion that is very green, aromatic, and sweet due to the dehydration step. In case you’re wondering ….no, this tea does not smell like duck you-know-what. This tea is delightfully aromatic and flavorful with fresh, floral, sweet, and subtle vegetal notes.
